Success - & Stupid Easy Paleo Chick-Fil-A Nuggets

Hey Hey Hey.... guess who lost 8.5 lbs. last week??? This girl right here!!! 


And I broke my losing streak on the tennis courts yesterday with a 2.5 hour 2 set win 7-5, 6-2 which was glorious. My feet hurt today from kicking so much ass yesterday. Ba dum tssssssss. No shit, I really did and I feel freaking awesome! Now let me put in all of the but's here cause I know that's a lot of weight. 

But I have a fair amount to lose and I typically lose a lot the first week cause I go all in.

But I usually drink some alcohol every night and this week I did not... 

But for the first time I really watched my gluten intake...

But I played an entire 2.5 hour tennis match yesterday and only drank water. Saved my beer for after. (I usually drink beer while playing... don't judge... tennis is a social sport and a head game... it relaxes me!)

So maybe some of it is water weight or whatever but I don't care cause my clothes feel better and that is how I gauge my progress.

And I have an awesome copycat recipe for you guys. Especially if you are from the south and you love Chick-fil-A like I do. It is the most delicious fast food chicken there is down here in these parts. I am not sure it's any healthier than any other fast food so I try to limit myself to once a month and I go for a chicken biscuit. My kids however love the nuggets, and I have to admit they are really good. Not processed parts but chunks of real chicken breast coated in crispy crunchy goodness. So when I saw this on Pinterest I thought I would give it a whirl and here are my results...


Process
  1. Place the chicken chunks in a resealable plastic bag and add the pickle juice; marinate in the fridge for an hour, but up to 4 hours.
  2. Open the bag and pour out any excess pickle juice. It doesn't have to be perfectly drained, just not totally juicy. Add the beaten egg and the buttermilk/cream, and mix together, then let sit for five minutes. Again, open the bag and pour out the excess liquid, if there is any. Texture is important at this point  the pieces should be wet but not swimming in a soup of pickle/egg/creamy goodness.
  3. Prep your dry ingredients by stirring them all together. Add the dry ingredients and mix them together in the bag, by a combination of shaking, rubbing, and pleading. It'll take a few minutes, so this is a good time to warm up your skillet of lard/oil on medium heat.
  4. Fry your chicken pieces, flipping every few minutes, until nice and golden brown. It should take about six to eight minutes per batch. Don't overcrowd the skillet; it took me four batches to cook all two pounds of chicken. Use a splatter screen if you have one. Drain the chicken pieces on paper towels as you cook the others, and keep them warm in the oven at 170 degrees.

Side notes... I marinated in pickle juice over night and threw in some pickles for frying which were awesome. Definitely use the splatter screen, this was a lifesaver cause it's messy! I used half and half.... cheat. Get ready to chow down cause they are crispy and delicious the minute they come out. Leftovers are not as crispy but still yummy! My kids devoured them!!!!

All in all it was a really nice weekend. beautiful weather, FSU spring football on TV, hangin with the kids, tennis and good healthy choices. Now if I can just figure out how to make a Paleo grilled cheese.

  4. Hell yah girl!!! I'm giving you a high five over here but it's not really the same....okay maybe I'll just do a little happy dance. 8 1/2 lbs you are killing it! Also those little nuggets look amazing and I have never heard of marinating in pickle juice but I'm totally down for trying that!
