Weekend Re-Cap & Recipes!

I took this weekend off pretty much. I didn't have any dates or things planned other than my little catering gig on Saturday morning. Kids were with their Dad because it was his weekend and Father's Day of course. So I saw a nice opportunity to kick back and binge watch a Snapped marathon, drool over a new cookbook, The Paleo Kitchen, watch some of my team mates sweat their asses of at tennis and drink a teeny tiny bit. 

I did yard work.... please... that is not a typo. I did, I got most of the bushes trimmed in my front yard and it looks a bit neater out there. I spent a bit of time in my basement too assessing the situation. Trying to get that shit hole cleaned out and looking good again after dumb dumb trashed it on his way out. But I digress. It was actually a quite nice and productive weekend. I was supposed to meet friends on Saturday night for  Top Golf excursion (think multi level driving range with a bowling alley type set up, bar restaurant and drinks) but I begged off as I am nursing a little bit of a sore old lady ankle... too many back to back tennis matches. So all in all it was a kind of productive lazy weekend. I like that. 

So let's get to some food first. Among the various things I made for my tennis match on Saturday I whipped up a tried and true 7 layer salad... courtesy of an old recipe from one of my BFF's Mom's, Jackie. This one never disappoints and even if you only make it once a year it's a good one to have in your repertoire of take along side dishes.

Jackie's Seven Layer salad
(I'm not giving you amounts on some things cause it's really to your liking)

Layer in a salad bowl or glass trifle dish:

2 heads Romaine washed and torn
1 layer of thinly sliced celery
1 layer finely minced red onion
1 layer of frozen peas
1/3 cup mayo (spread evenly over the peas)
Grated Parmesan cheese
1 lb. ( I know it seems excessive but duh... bacon) crisp, crumbled bacon
Sprinkle a teaspoon or so of sugar all over the top. I don't know why, just do it. 

Let sit in the refrigerator over night and toss lightly when ready to serve, or let your guests just dig in and mix it up themselves. They will love it! And no it's not particularly healthy and ... ????
  

As you may or may not know I love the whole theory behind eating Paleo and I try to cook that way as much as possible. The Paleo Kitchen. the newest cookbook by Juli Bauer and George Bryant, came out this weekend that I was lucky enough to find at Costco for less than $20 on Friday night after work... score. They are THE Paleo Gurus (go check out their blogs) and the book is amazing. Packed full of really solid information on the lifestyle as well as mouthwatering recipes with beautiful pics. And it's not hard to do, I promise... basic cooking skills are all you will need! So skip ahead to Sunday breakfast for me and some Sun Dried Tomato Sweet Potato Hash because I just happened to have all of the ingredients on hand. Because I am just like that, a firm believer in a well stocked pantry. Now, obvi I cannot post the recipe but please go get the book if you have any love for great, healthy food and cooking, you will not be sorry! And this shit was  uh-mazing! Nailed it!


And let's see... there were a few other random amazing foods I whipped up and things in general like Ghiradelli brownies with chocolate butter cream icing, Erin's Cowboy Crack Dip (a big hit), an amazing full moon, Braves Baseball on TV,  tennis and Miller Lite... cause it's the little things in life that make me happy!

  3. Love a good recipe . . . I'm copying into my recipes file! And your weekend actually sounds delightful . . . I get happy when I feel like I've accomplished stuff around the house. It's such a chore that when it's done, it's a boost for me!

  7. "I did yard work.... please... that is not a typo." Bahahahah! I haaaate outdoor work. I mean, I hate ALL work, but, outdoor work definitely takes the cake! haha
